Buttery Corn Ribs with Butter Olive Oil

Ingredients

  • 4 ears fresh corn, husked

  • 3 tablespoons Butter Olive Oil

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon chili powder

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon freshly ground black pepper

  • 1/4 teaspoon red pepper flakes, optional

  • 1 lime, cut into wedges

  • 2 tablespoons chopped fresh parsley or cilantro

  • Optional for Serving: Chipotle mayo, garlic aioli, ranch, or lime crema

Directions

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. Carefully cut each ear of corn in half crosswise. Place each half flat-side down on a sturdy cutting board and carefully cut lengthwise into quarters to create corn “ribs.”

  3. In a small bowl, combine Butter Olive Oil, smoked paprika, garlic powder, chili powder, salt, black pepper, and red pepper flakes, if using.

  4. Place corn ribs in a large bowl and drizzle with the seasoned Butter Olive Oil. Toss well, making sure the kernels are evenly coated.

  5. Arrange the corn ribs on the prepared baking sheet in a single layer.

  6. Roast for 20–25 minutes, turning halfway through, until the kernels are golden brown and lightly charred and the corn begins to curl.
