This is one of those recipes I come back to again and again — especially in January.

When the fridge feels a little bare and I want something fresh, filling, and unfussy, this white bean & herb salad checks every box. It’s humble in the best way. Pantry-friendly, endlessly adaptable, and completely dependent on good olive oil to bring it to life.

Creamy white beans, fresh herbs, a little crunch from red onion, and a splash of Champagne white wine vinegar for brightness. Finished with a beautiful single varietal olive oil, this salad proves that simple ingredients don’t have to be boring — they just have to be good.

This is the kind of dish that works as a side, a light lunch, or spooned over toast with a little extra olive oil (trust me). It gets better as it sits, travels well, and somehow feels both comforting and fresh at the same time.

Ingredients

  • 2 cans (15 oz each) white beans, drained and rinsed
  • ½ cup fresh parsley, chopped
  • 2 tablespoons fresh basil or dill, chopped
  • ¼ cup red onion, finely diced
  • ¼ cup Extra Virgin Olive Oil
  • 2 tablespoons Champagne White Wine Vinegar
  • Sea salt, to taste
  • Fresh cracked black pepper, to taste
  • Optional: chopped tomatoes or arugula

Directions

  1. In a large bowl, combine white beans, herbs, and red onion.
  2. Drizzle with olive oil and Champagne white wine vinegar.
  3. Season with sea salt and cracked black pepper.
  4. Gently toss until well combined.
  5. Taste and adjust seasoning as needed.
  6. Serve immediately or refrigerate for up to 24 hours to let flavors develop.
