A bright and refreshing Mediterranean Orzo Salad tossed with Lemon Premium Olive Oil and Sicilian Lemon White Balsamic, featuring tomatoes, cucumber, olives, and artichokes.
Ingredients

1½ cups dry orzo

¼ cup Lemon Premium Olive Oil

3 tablespoons Sicilian Lemon White Balsamic

1 cup cherry tomatoes, halved

1 cup diced cucumber

½ cup kalamata olives
-
½ cup artichoke hearts, chopped

¼ cup red onion, finely diced

¼ cup crumbled feta cheese (optional)

1 tablespoon fresh parsley, chopped

Salt and freshly ground black pepper, to taste
Directions
Cook orzo according to package directions until al dente. Drain and rinse briefly under cool water.
In a large bowl, whisk together Lemon Premium Olive Oil and Sicilian Lemon White Balsamic. Season lightly with salt and pepper.
Add cooked orzo to the bowl and toss to coat while still slightly warm.
Stir in tomatoes, cucumber, olives, artichokes, red onion, and parsley.
Fold in feta if using.
Adjust seasoning as needed and refrigerate for at least 30 minutes before serving to allow flavors to meld.
Serve chilled or at room temperature.
