    • 3 cups peeled and cubed butternut squash

    • 1 (15-ounce) can chickpeas, drained, rinsed and thoroughly dried

    • 2 tablespoons The Little Shop Butter Olive Oil

    • 1/2 teaspoon sea salt

    • 1/4 teaspoon freshly ground black pepper

    • 1/4 teaspoon cinnamon, optional

    • 6 cups chopped kale, tough stems removed

    • 1 large crisp apple, thinly sliced

    • 1/2 cup dried cranberries

    • 1/3 cup roasted pepitas

    • 1/2 cup crumbled goat cheese

    • 3 tablespoons The Little Shop Gravenstein Apple Balsamic Vinegar

    • 1/4 cup The Little Shop Butter Olive Oil

    • 1 teaspoon Dijon mustard

    • 1 teaspoon pure maple syrup

    • 1 small garlic clove, finely minced

    • Pinch of sea salt

    • Freshly ground black pepper, to taste

    Directions

    1. Preheat oven to 425Β°F. Line a large baking sheet with parchment paper.
    2. Place the butternut squash and dried chickpeas on the prepared baking sheet. Drizzle with Butter Olive Oil and season with salt, pepper and cinnamon, if using. Toss to coat evenly.

    3. Roast for 25–30 minutes, stirring halfway through, until the squash is tender and lightly caramelized and the chickpeas are slightly crisp. Allow to cool for several minutes.

    4. Make the vinaigrette by whisking together the Gravenstein Apple Balsamic, Butter Olive Oil, Dijon mustard, maple syrup, garlic, salt and pepper until well combined.

    5. Place the kale in a large salad bowl. Drizzle with about 1 tablespoon of dressing and massage the kale with clean hands for 30–60 seconds, until softened.

    6. Add the roasted butternut squash and chickpeas, sliced apple, dried cranberries, pepitas and goat cheese.

    7. Drizzle with additional Apple Balsamic vinaigrette and gently toss to combine.

    8. Serve immediately and enjoy.
