Garlic & Honey Ginger Chicken Caesar Salad

Ingredients

    • 2 boneless, skinless chicken breasts
    • 2 tbsp Garlic Olive Oil
    • 1 tbsp Honey Ginger Balsamic
    • 1 tsp Dijon mustard
    • Salt & pepper to taste

    • 3 tbsp Garlic Olive Oil
    • 1 tbsp Honey Ginger Balsamic
    • 1 tbsp lemon juice
    • 1 tsp Dijon mustard
    • 1 clove garlic, minced
    • 1 tbsp grated Parmesan
    • Salt & pepper to taste

    • 1 large head romaine lettuce, chopped
    • 1 cup croutons (homemade or store-bought)
    • ¼ cup grated Parmesan cheese

    Directions

    1. In a bowl, whisk Garlic Olive Oil, Honey Ginger Balsamic, Dijon mustard, salt, and pepper. Coat chicken and let sit for at least 15 minutes.
    2. Grill or pan-sear chicken over medium heat for 6–7 minutes per side, or until fully cooked. Let rest, then slice.
    3. In a jar or bowl, whisk together Garlic Olive Oil, Honey Ginger Balsamic, lemon juice, Dijon, garlic, Parmesan, salt, and pepper. Adjust to taste.
    4. In a large bowl, toss chopped romaine with dressing. Top with grilled chicken, croutons, and more Parmesan.
    5. Serve immediately with a glass of crisp white wine or sparkling water with lemon!
