Lemon Herb Chicken Souvlaki
Share
There are some recipes that feel fresh and easy the minute you start making them, and this Lemon Herb Chicken Souvlaki is one of those.
It’s bright, herby, full of citrus flavor, and exactly the kind of meal I love when I want something simple that still feels a little special. The chicken is marinated in Lemon Olive Oil, fresh lemon juice, garlic, and oregano, then grilled until juicy with just the right amount of char on the edges.
If you want even more flavor, a little Garlic Olive Oil in the marinade adds wonderful depth without making the recipe complicated.
I love meals like this because they’re versatile. You can serve the skewers with rice, tuck them into pita bread, add them to a salad, or pair them with grilled vegetables and a simple yogurt sauce. They’re great for weeknight dinners, but they also feel perfect for backyard meals and summer entertaining.
The bell peppers add color, sweetness, and that little extra freshness that makes the plate feel complete. And because everything cooks on skewers, the chicken stays tender while the vegetables get just a bit smoky from the grill.
What makes this recipe shine is the marinade. The Lemon Olive Oil gives the chicken a smooth, citrusy richness, while the garlic and oregano bring that classic Mediterranean flavor we all love in souvlaki.
It’s easy, flavorful, and one of those recipes that tastes like sunshine on a plate.
If you’re looking for a grilled chicken recipe that’s bright, juicy, and full of fresh flavor, this one is definitely worth adding to your rotation.
