  • 1 refrigerated pie crust or homemade galette dough
  • 2–3 medium ripe tomatoes, sliced

  • 1 cup fresh corn kernels

  • 1 cup whole-milk ricotta cheese

  • 3 tablespoons Garlic Olive Oil, divided

  • 1/4 cup freshly grated Parmesan cheese

  • 1 teaspoon fresh thyme leaves, plus more for garnish

  • 1/2 teaspoon kosher salt, divided

  • 1/4 teaspoon freshly ground black pepper

  • 1 egg

  • 1 tablespoon water

  • Optional: fresh basil or additional thyme for serving

Directions

  1. Preheat oven to 400°F. Line a large baking sheet with parchment paper.
  2. Arrange the sliced tomatoes on paper towels or a clean kitchen towel. Sprinkle lightly with some of the salt and allow them to sit for 10–15 minutes. Gently blot away excess moisture.

  3. In a small bowl, combine the ricotta, 1 tablespoon Garlic Olive Oil, Parmesan cheese, thyme, remaining salt, and black pepper. Stir or whip until smooth and creamy.
