    • 1/2 cup panko breadcrumbs

    • 2 tablespoons finely chopped green onion

    • 1 tablespoon chopped fresh dill

    • 1 teaspoon Dijon mustard

    • 1 teaspoon lemon zest

    • 1/2 teaspoon sea salt

    • 1/4 teaspoon freshly ground black pepper

    • Additional Garlic Olive Oil for cooking, if using a skillet

    • 1 tablespoon fresh lemon juice

    Directions

    1. Prepare the salmon. Add about three-quarters of the salmon to a food processor and pulse several times until finely chopped but not completely smooth. Finely dice the remaining salmon by hand.
    2. Transfer all of the salmon to a large mixing bowl.

    3. Add the Garlic Olive Oil, Honey Ginger Balsamic Vinegar, egg, panko breadcrumbs, green onion, dill, Dijon mustard, lemon zest, salt, and pepper.

    4. Gently mix just until the ingredients are combined. Avoid overmixing so the burgers stay tender.

    5. Divide the salmon mixture into 4 equal portions and gently shape each into a burger patty about 3/4-inch thick.

    6. Place the patties on a parchment-lined plate or baking sheet and refrigerate for approximately 20 minutes. Chilling helps the burgers hold their shape during cooking.
