It's especially delicious alongside Parmesan, fresh thyme, and crunchy toasted pumpkin seeds. Sweet, savory, creamy, and nutty all in one bite? Yes, please!

Let's Talk About the Ingredients

Butternut Squash

Sweet, tender butternut squash is the star of this recipe. Roasting it first brings out its natural sweetness and gives it those delicious golden edges. We fold some into the risotto and save a little for the top.

Arborio Rice

This short-grain Italian rice is what gives risotto its signature creamy consistency. Its starch releases gradually as you stir, creating a rich, velvety texture.

Roasted Walnut Oil

Our featured Little Shop ingredient adds a beautifully nutty flavor that complements the squash, Parmesan, and herbs. A little drizzle just before serving makes the finished dish even more delicious.

Parmesan Cheese

Freshly grated Parmesan adds salty, savory richness. Save a few shaved pieces for garnish, too. They make the finished bowl look especially inviting!

Fresh Thyme and Sage

These classic fall herbs bring an earthy, aromatic touch that balances the sweetness of the squash.

Toasted Pumpkin Seeds

A sprinkle of toasted pumpkin seeds adds just the right amount of crunch. It's a wonderful contrast to the soft, creamy risotto.

How to Make Creamy Autumn Risotto

Start by roasting diced butternut squash with a little Roasted Walnut Oil, salt, and pepper until tender and lightly caramelized.

While the squash roasts, warm your vegetable or chicken broth in a separate saucepan. Keeping the broth warm helps the rice cook evenly as you gradually add it to the pan.

Next, gently cook shallots and garlic in olive oil, then stir in the Arborio rice. Toasting the rice for a minute or two helps develop flavor before adding a splash of dry white wine.

Once the wine has mostly absorbed, begin adding warm broth one ladle at a time, stirring frequently and allowing each addition to absorb before adding more.

After about 20 to 25 minutes, the rice should be tender with a slight bite and surrounded by a beautifully creamy sauce.

Fold in the roasted squash, Parmesan, fresh herbs, and a little Roasted Walnut Oil. Spoon into warm bowls, then finish with extra squash, toasted pumpkin seeds, Parmesan shavings, and fresh parsley.

And there you have it: a gorgeous bowl of autumn comfort!

Tips for Perfectly Creamy Risotto

If you've never made risotto before, don't worry! A few simple tricks make all the difference.

  • Use Arborio rice: Its starch content is essential for that classic creamy texture.
  • Keep your broth warm: Cold broth slows the cooking process and can affect how evenly the rice cooks.
  • Add broth gradually: Give the rice time to absorb each addition before adding more.
  • Stir frequently: Gentle stirring encourages the rice to release its starch without breaking apart.
  • Don't overcook: The rice should be tender but still have a slight bite in the center.
  • Serve immediately: Risotto is at its creamiest right after cooking. Add a splash of warm broth if it becomes too thick.

Make It Your Own!

One of the things I love most about risotto is how easily you can change it up depending on what you're craving.

  • Add Mushrooms: Sautéed cremini or wild mushrooms bring extra earthy flavor.
  • Try Crispy Sage: Finish with a few crispy sage leaves for an aromatic autumn touch.
  • Add Protein: Serve alongside roasted chicken, pork tenderloin, or seared scallops.
  • Make It Vegetarian: Use vegetable broth and a vegetarian-friendly hard cheese.
  • Extra Nutty: Add a sprinkle of toasted chopped walnuts alongside the pumpkin seeds.
  • Skip the Wine: Replace the white wine with additional warm broth and a small squeeze of lemon juice.

What to Serve with Butternut Squash Risotto

This creamy autumn risotto is hearty enough to enjoy as a main course, but it's also wonderful as a side dish for your favorite fall meals.

Try serving it with roasted chicken, grilled pork chops, sautéed mushrooms, or a simple green salad with a bright balsamic vinaigrette.

For a cozy dinner party, pair it with crusty bread and a crisp green salad. The fresh, tangy flavors help balance the rich, creamy rice beautifully.

Can You Make Risotto Ahead of Time?

Risotto is always best enjoyed fresh, but you can absolutely get a head start!

Roast the butternut squash, chop your shallots, grate the Parmesan, and toast your pumpkin seeds ahead of time. Store everything separately until you're ready to cook.

Leftover risotto can be refrigerated in an airtight container for up to three days. Reheat gently on the stovetop with a splash of broth, stirring until creamy again.

And if you happen to have leftovers, they make wonderful little risotto cakes the next day!

A Little Taste of Autumn in Every Bite

There's a reason risotto is one of my favorite comfort foods. It's simple, satisfying, and feels just a little indulgent without being fussy.

This Autumn Butternut Squash Risotto brings together sweet roasted squash, creamy Parmesan rice, fresh herbs, and the rich, toasted flavor of our Roasted Walnut Oil for a dish that's practically made for sweater weather.

Whether you're planning a cozy family dinner or looking for something special to serve guests, this one deserves a spot on your fall menu.

      3. Spread evenly on the prepared baking sheet.

      4. Roast for 20–25 minutes, turning halfway through, until tender and lightly golden.

      5. Remove from the oven and set aside.

      Prepare the Risotto Base

      1. In a medium saucepan, warm the broth over low heat. Keep it warm throughout cooking.

      2. Heat extra virgin olive oil in a large, deep skillet or heavy-bottomed saucepan over medium heat.

      3. Add the shallot and cook for 2–3 minutes until softened.

      4. Stir in garlic and cook for another 30 seconds.

      5. Add Arborio rice and stir for 1–2 minutes until lightly toasted.

      2. Stir in grated Parmesan, 1 tablespoon Roasted Walnut Oil, thyme, and sage.
