Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar or honey
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/3 cup Butter Olive Oil, or mild EVOO
  • 2 tablespoons melted butter, optional
  • 1/2 cup corn kernels, fresh, frozen, or canned and drained
  • 4 tablespoons softened butter
  • 1 tablespoon honey
  • 1 teaspoon Traditional Dark Balsamic or Sicilian Lemon White Balsamic
  • Pinch of sea salt

Directions

  1. Preheat oven to 400°F. Lightly grease an 8-inch baking dish, cake pan, or cast iron skillet with olive oil.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and sea salt.
  3. In a separate bowl, whisk together buttermilk, eggs, olive oil, and melted butter if using.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined. Be careful not to overmix.
  5. Fold in the corn kernels.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 20 to 25 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  8. While the cornbread bakes, mix softened butter, honey, balsamic, and sea salt in a small bowl until smooth.
  9. Let the cornbread cool slightly before slicing. Serve warm with honey balsamic butter.
