Large Portobello mushrooms become the perfect edible bowl for juicy cherry tomatoes, creamy fresh mozzarella, fragrant basil, and a generous drizzle of our Oregano White Balsamic Vinegar. Paired with our Garlic Olive Oil, every bite is bright, savory, and wonderfully balanced.

As the mushrooms roast, they become tender and meaty while the tomatoes soften and the mozzarella melts into every nook and cranny. A final drizzle of Oregano White Balsamic after baking adds a fresh burst of herbaceous flavor that truly brings the whole dish together.

Ingredients

  • 4 large Portobello mushroom caps, stems removed
  • 2 tablespoons Garlic Olive Oil
  • Salt and freshly cracked black pepper, to taste
  • 1½ cups cherry tomatoes, halved
  • 8 ounces fresh mozzarella pearls (or diced fresh mozzarella)
  • ¼ cup freshly grated Parmesan cheese
  • ¼ cup chopped fresh basil, plus extra for garnish
  • 2 cloves garlic, minced
  • 2 tablespoons Oregano White Balsamic Vinegar
  • 1 tablespoon panko breadcrumbs (optional, for added texture)
  • 1 tablespoon Oregano White Balsamic Vinegar
  • Fresh basil leaves
  • Freshly grated Parmesan
  • Fresh cracked black pepper

Directions

  1. Preheat your oven to 400°F.
  2. Gently wipe the Portobello mushrooms clean and remove the stems. If desired, scrape out the dark gills with a spoon for a cleaner presentation.
  3. Brush both sides of each mushroom with Garlic Olive Oil and season lightly with salt and pepper.
  4. Arrange the mushrooms, gill-side up, on a parchment-lined baking sheet.
  5. In a medium bowl, combine the cherry tomatoes, mozzarella, Parmesan, basil, minced garlic, Oregano White Balsamic, and optional panko breadcrumbs.
  6. Spoon the filling evenly into each mushroom cap.
  7. Bake for 20–25 minutes, or until the mushrooms are tender and the cheese is melted and lightly golden.
  8. Remove from the oven and let rest for 2–3 minutes.
  9. Finish with an additional drizzle of Oregano White Balsamic, extra basil, Parmesan, and freshly cracked black pepper before serving.
