Bruschetta, the Way I Always Want It

Classic Tomato Bruschetta with Basil Olive Oil at The Little Shop of Olive Oils

This is one of those recipes that reminds me why simple food is usually the best food.

Good bread. Juicy tomatoes. Fresh herbs. And olive oil that actually tastes like something. That’s it. No need to complicate things.

This bruschetta is fresh, bright, and full of flavor without being heavy. The tomatoes are chopped small so every bite gets a little bit of everything, the bread is toasted just enough to hold up, and the Basil Olive Oil brings it all together with that clean, herb-forward finish that makes it feel unmistakably Italian.

Sometimes I’ll finish it with a tiny drizzle of Traditional Balsamic — not to sweeten it, just to add depth. It’s optional, but lovely.

This is the kind of appetizer that works year-round. Perfect for entertaining, perfect for wine nights, and honestly perfect standing at the counter “just tasting” before anyone else arrives.

  • 3 ripe tomatoes, finely diced
  • 2 tablespoons finely chopped fresh basil
  • 1 tablespoon finely diced red onion
  • 3 tablespoons Basil Olive Oil, plus more for brushing bread
  • Salt and freshly ground black pepper, to taste
  • Optional: Traditional Balsamic Vinegar, for finishing

  1. Preheat oven to 400°F. Brush baguette slices lightly with Basil Olive Oil and toast until golden, about 8–10 minutes.
  2. In a bowl, combine tomatoes, basil, red onion, Basil Olive Oil, salt, and pepper. Stir gently.
  3. Let the mixture rest for 5–10 minutes so the flavors come together.
  4. Spoon tomato mixture onto toasted bread just before serving.
  5. Finish with a light drizzle of Traditional Balsamic if using.
  6. Top with fresh arugula or basil leaves and serve immediately.
