Cozy Corn Chowder with Butter Olive Oil

Ingredients

  • 6 slices bacon, chopped

  • 2 tablespoons The Little Shop of Olive Oils Butter Olive Oil

  • 1 medium yellow onion, diced

  • 2 celery stalks, diced

  • 2 cloves garlic, minced

  • 4 cups fresh corn kernels, about 5–6 ears of corn, or frozen corn

  • 1 1/2 pounds Yukon Gold potatoes, cut into small cubes

  • 4 cups chicken or vegetable broth

  • 1 teaspoon fresh thyme leaves, or 1/2 teaspoon dried thyme

  • 1/2 teaspoon smoked paprika

  • 1 teaspoon kosher salt, plus more to taste

  • 1/2 teaspoon freshly ground black pepper

  • 1 cup heavy cream or half-and-half

  • 2 tablespoons all-purpose flour

  • 2 tablespoons water

  • 2 tablespoons chopped fresh chives or green onions, for serving

  • Additional Butter Olive Oil, for finishing, optional

Directions

  1. Add the chopped bacon to a large soup pot or Dutch oven over medium heat. Cook until crisp. Transfer the bacon to a paper towel-lined plate, leaving about 1 tablespoon of bacon drippings in the pot.
  2. Add the Butter Olive Oil, diced onion, and celery. Cook for 5–6 minutes, stirring occasionally, until the vegetables begin to soften.

  3. Add the garlic and cook for about 30 seconds, just until fragrant.

  4. Stir in the corn, potatoes, broth, thyme, smoked paprika, salt, and black pepper.

  5. Bring the chowder to a gentle boil, then reduce the heat and simmer uncovered for 15–20 minutes, or until the potatoes are fork-tender.

  6. For a creamier chowder, carefully remove about 2 cups of the soup and blend until mostly smooth. Return it to the pot. Alternatively, use an immersion blender for just a few quick pulses, leaving plenty of corn and potato pieces intact.

  7. Stir in the heavy cream.

  8. In a small bowl, whisk together the flour and water until smooth. Slowly stir the mixture into the chowder.

  9. Simmer for another 5 minutes, stirring occasionally, until the chowder has thickened slightly.

  10. Stir in about half of the cooked bacon. Taste and adjust the salt and pepper as needed.

  11. Ladle into bowls and top with the remaining crispy bacon, chopped chives or green onions, freshly cracked black pepper, and an optional drizzle of Butter Olive Oil.
