1 tablespoon Basil Premium Olive Oil

½ cup yellow onion, chopped

2 cloves garlic, minced

¾ cup carrots, chopped

½ cup celery, chopped

5 cups low sodium chicken broth

1½ teaspoons dried thyme

9 ounces tortellini (fresh or frozen)

2 cooked chicken breasts, shredded

5 ounces fresh spinach

2 tablespoons Sicilian Lemon White Balsamic Vinegar

2 tablespoons lemon zest

Salt and pepper, to taste
Directions
In a large pot or skillet, heat the Basil Olive Oil over medium-high heat.
Add the onion and cook until softened, about 3 minutes.
Add the garlic, carrots, and celery and cook for another 3 minutes.
Pour in the chicken broth and stir in the dried thyme.
Bring the mixture to a boil.
Add the tortellini and cook according to package instructions.
About 1 minute before the tortellini is done, stir in the shredded chicken and spinach.
Cook for an additional minute until heated through.
Remove from heat and stir in the Sicilian Lemon White Balsamic Vinegar and lemon zest.
Season with salt and pepper to taste.
Serve warm.
