Ingredients

3 pounds red potatoes, halved

2 tablespoons Garlic Olive Oil

5 cloves garlic, minced

1 teaspoon dried thyme
-
½ teaspoon dried oregano
-
½ teaspoon dried basil

⅓ cup freshly grated Parmesan cheese

Kosher salt and freshly ground black pepper, to taste

2 tablespoons unsalted butter or Butter Olive Oil if preferred

2 tablespoons chopped parsley

Rosemary sprigs, for garnish
Directions
Preheat oven to 400°F. Lightly oil a baking sheet or coat with nonstick spray.
Arrange potatoes in a single layer on the baking sheet.
Add garlic olive oil, garlic, thyme, oregano, basil, and Parmesan. Season with salt and pepper and toss gently to combine.
Roast for 25–30 minutes, until golden and crisp.
Remove from oven and stir in butter until melted, about 1 minute. Or stir in butter olive oil until combined, if using.
Garnish with rosemary and parsley and serve immediately.
