Mango Pineapple Street Corn Salad

Ingredients

  • 3 cups grilled corn kernels

  • 1 cup fresh mango, diced

  • 1 cup fresh pineapple, diced

  • 1 jalapeño, thinly sliced or finely diced

  • ¼ cup red onion, finely diced

  • ¼ cup fresh cilantro, chopped

  • ½ cup crumbled cotija or feta cheese

  • Juice of 1 lime

  • 2 tbsp Jalapeño Olive Oil
  • 1 tbsp Key Lime Balsamic
  • ½ tsp chili powder

  • Salt and pepper, to taste

  • Extra lime wedges, for serving

Directions

  1. Grill the corn until lightly charred, then cut the kernels from the cob.

  2. In a large bowl, combine the grilled corn, mango, pineapple, jalapeño, red onion, cilantro, and crumbled cheese.

  3. In a small bowl, whisk together lime juice, Jalapeño Olive Oil, Key Lime Balsamic, chili powder, salt, and pepper.
