Chickpea Salad (Simple, Fresh, and Always a Good Idea)

This is the kind of salad I make when I want something easy, nourishing, and full of flavor — without turning on the stove.

Chickpeas are one of those pantry staples I always keep around. Toss them with a few fresh vegetables, herbs, and really good olive oil, and suddenly you’ve got a dish that works just about anywhere. Lunch at your desk. A side for grilled chicken or fish. Something to bring to a gathering that won’t wilt or get sad on the table.

Using Milanese Gremolata Olive Oil here just makes sense. The garlic, parsley, and lemon notes give the chickpeas brightness and depth without needing a long ingredient list. It tastes fresh, clean, and balanced — exactly what this kind of salad should be.
