A fresh, simple chickpea salad tossed with vegetables, herbs, and Milanese Gremolata Olive Oil. Bright, satisfying, and perfect as a side or light meal.
Ingredients
- 2 cups cooked chickpeas (or 1½ cans, drained and rinsed)
- ½ red bell pepper, thinly sliced or diced
- ½ green bell pepper, thinly sliced or diced
- 2 tablespoons chopped fresh parsley or cilantro

3 tablespoons Milanese Gremolata Olive Oil
- 1–2 teaspoons fresh lemon juice (optional, to taste)
- Salt and freshly ground black pepper, to taste
Directions
- Add chickpeas, red pepper, green pepper, and herbs to a bowl.
- Drizzle with Milanese Gremolata Olive Oil and toss gently to coat.
- Add lemon juice if desired and season with salt and pepper.
- Taste and adjust seasoning as needed.
