A refreshing, protein-packed chicken salad with crisp apples, cranberries, and a tangy-sweet kick from Gravenstein Apple Balsamic — perfect for lunch, meal prep, or light bites on apple slices or greens.
Ingredients
- 3 cups cooked chicken, shredded or diced
- ½ cup plain Greek yogurt (or half yogurt/half mayo for creamier texture)

2–3 Tbsp Gravenstein Apple Balsamic

1–2 tsp Olive Oil (mild or Garlic works beautifully)

2 small apples, one sliced thin and cored and 1 diced (Honeycrisp or Pink Lady recommended)
- ⅓ cup dried cranberries
- ¼ cup celery, finely chopped
- ¼ cup sliced almonds or chopped walnuts
- Sea salt and pepper, to taste
- Microgreens or spring mix
- Chopped fresh chives
- 1 tsp Dijon mustard for extra zest

Directions
In a bowl, whisk Greek yogurt, Gravenstein Apple Balsamic, Olive Oil, Honey, salt, and pepper until creamy.
Add chicken, diced apples, cranberries, celery, and nuts. Fold gently until everything is coated.
Add more balsamic for sweetness or yogurt for creaminess as desired.
Spoon onto apple slices (cored), croissants, wraps, or over greens. Top with microgreens and chives if using.
