Lemon Garlic Chicken Skewers
With Shop EVOO Lemon Olive Oil & Garlic Olive Oil — Summer Grilling at its finest
- ⭐ 3 tbsp Shop EVOO Lemon Olive Oil, divided
- ⭐ 2 tbsp Shop EVOO Garlic Olive Oil
- 🍗 2 lbs chicken breast or thighs, 1.5" cubes
- 🍋 Juice of 1 fresh lemon
- 🌿 1 tsp dried oregano
- 🌶️ 1 tsp smoked paprika
- 🌶️ ½ tsp red pepper flakes
- 🧂 1 tsp flaky sea salt
- 🫒 ½ tsp cracked black pepper
- 🌿 Fresh parsley for garnish
- 🍋 Lemon wedges for serving
- Make the marinade. Whisk together 2 tbsp Lemon Olive Oil, Garlic Olive Oil, fresh lemon juice, oregano, smoked paprika, red pepper flakes, salt and pepper in a large bowl. It will smell absolutely incredible. That's normal. 😄
- Marinate the chicken. Add chicken cubes and toss to coat every piece. Cover and refrigerate for at least 30 minutes — or up to 4 hours if you have time. The longer the better.
- Thread the skewers. Thread marinated chicken onto skewers leaving a small gap between each piece so heat can circulate and you get that gorgeous char on every side.
- Fire up the grill. Preheat to medium-high. Grill skewers for 10–12 minutes turning every 3–4 minutes until golden, charred in spots, and cooked through. Resist the urge to move them constantly — let the grill do its thing.
- The finish. Remove from grill. Immediately drizzle with the remaining 1 tbsp Lemon Olive Oil. Scatter fresh parsley generously. Serve with lemon wedges. Take a bow — you earned it. 🏆
Pro Tips for Perfect Skewers Every Time 🔥
- 🍗 Use thighs if you can — chicken thighs are more forgiving on the grill and stay juicier than breasts. Either works beautifully with this marinade.
- 📏 Even cube size matters — cut chicken into uniform 1.5" cubes so everything cooks at the same rate. Uneven pieces = some overcooked, some undercooked.
- ⏰ Don't rush the marinade — 30 minutes is the minimum. 2–4 hours is ideal. The Lemon and Garlic Olive Oils need time to penetrate the chicken properly.
- 🔥 Hot grill = better char — preheat your grill for at least 10 minutes before the skewers go on. A hot grill sears and chars; a lukewarm grill steams. Big difference.

Directions
Whisk together 2 tbsp Lemon Olive Oil, Garlic Olive Oil, fresh lemon juice, oregano, smoked paprika, red pepper flakes, salt and pepper in a large bowl.
Add chicken cubes and toss to coat every piece. Cover and refrigerate for at least 30 minutes or up to 4 hours for best results.
Thread marinated chicken onto skewers leaving a small gap between each piece for even cooking and maximum char.
Preheat grill to medium-high. Grill skewers for 10–12 minutes turning every 3–4 minutes until golden, charred in spots, and cooked through to 165°F internal temperature.
Remove from grill. Immediately drizzle with the remaining 1 tbsp Lemon Olive Oil. Scatter fresh parsley generously and serve with lemon wedges.
Recipe Note
If using wooden skewers soak them in water for 30 minutes before grilling so they don't burn. Metal skewers are even better — they conduct heat from the inside for faster, more even cooking. Chicken thighs stay juicier than breasts on the grill — either works beautifully. Don't rush the marinade — 2 to 4 hours is ideal. Always finish with a drizzle of Lemon Olive Oil straight off the grill — it's the detail that makes everyone ask for the recipe.
