Red Cheddar & Balsamic Red Onion Flatbread

Ingredients

  • 1 lb prepared pizza dough, brought to room temperature

  • 2 tablespoons The Little Shop Extra Virgin Olive Oil, divided

  • 1 large red onion, thinly sliced

  • 2 tablespoons The Little Shop Traditional Dark Balsamic Vinegar

  • 1 teaspoon brown sugar, optional

  • 1/4 teaspoon kosher salt

  • Freshly ground black pepper, to taste

  • 1 1/2 cups shredded sharp red cheddar cheese

  • 1 teaspoon fresh thyme leaves, optional

  • 2 tablespoons chopped fresh chives

  • Flour or cornmeal, for shaping the dough

Directions

  1. Preheat oven to 475°F. Place a pizza stone or inverted baking sheet in the oven while it heats, if desired.
  2. Heat 1 tablespoon Extra Virgin Olive Oil in a skillet over medium-low heat. Add the sliced red onion and salt.
  3. Cook the onions for 12–15 minutes, stirring occasionally, until soft and beginning to caramelize.
  4. Add the Traditional Dark Balsamic Vinegar and brown sugar, if using. Cook for another 2–3 minutes until the balsamic has reduced and the onions are glossy and jammy. Remove from heat.
  5. On a lightly floured surface, stretch or roll the pizza dough into an approximately 10- to 12-inch flatbread.
  6. Transfer the dough to parchment paper or a lightly floured pizza peel. Brush the surface with the remaining tablespoon of Extra Virgin Olive Oil.
  7. Sprinkle the shredded red cheddar evenly over the dough, leaving a small border around the edges.
  8. Spoon the balsamic red onions over the cheese. Sprinkle with fresh thyme, if using, and add a few grinds of black pepper.
  9. Bake for 10–14 minutes, or until the crust is puffed and golden and the cheddar is melted and bubbling.
  10. Remove from the oven and finish with fresh chopped chives. Let rest for 2–3 minutes before slicing.
