Ingredients

  • 4 boneless, skinless chicken breasts, about 6 ounces each
  • ¼ cup Oregano White Balsamic Vinegar
  • ¼ cup Garlic Olive Oil
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, finely minced
  • 1 teaspoon fresh lemon zest
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh oregano, plus more for garnish
  • Grilled zucchini
  • Grilled asparagus
  • Roasted or grilled baby potatoes
  • Lemon wedges

Directions

  1. Place the chicken breasts between two sheets of parchment paper and gently pound them to an even thickness. This helps them cook evenly.
  2. In a medium bowl, whisk together the Oregano White Balsamic, Garlic Olive Oil, Dijon mustard, minced garlic, lemon zest, lemon juice, salt, black pepper and fresh oregano.
  3. Place the chicken in a shallow dish or resealable bag. Pour the marinade over the chicken and turn each piece until evenly coated.
  4. Cover and refrigerate for at least 30 minutes or for up to 4 hours.
  5. Preheat an outdoor grill or grill pan to medium-high heat. Lightly oil the grill grates if needed.
  6. Remove the chicken from the marinade and allow any excess to drip away. Discard the remaining marinade.
  7. Grill the chicken for 5–8 minutes per side, depending on thickness, until grill marks appear and the internal temperature reaches 165°F.
  8. Transfer the chicken to a clean plate and allow it to rest for 5 minutes.
  9. Garnish with fresh oregano and serve with grilled vegetables, baby potatoes and lemon wedges.
