Ingredients
-
1 cup ricotta cheese
-
3/4 cup milk
-
2 large eggs
-
2 tablespoons Sicilian Lemon White Balsamic
-
1 teaspoon vanilla extract
-
1 tablespoon fresh lemon zest
-
1 cup all-purpose flour
-
2 tablespoons sugar
-
1 1/2 teaspoons baking powder
-
1/4 teaspoon baking soda
-
1/4 teaspoon sea salt
-
Butter or neutral oil for the pan
-
Powdered sugar for serving
-
Lemon slices for garnish
-
Fresh berries or maple syrup, optional for serving
Directions
In a medium bowl, whisk together the ricotta, milk, eggs, Sicilian Lemon White Balsamic, vanilla, and lemon zest until smooth.
In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Gently stir the dry ingredients into the wet ingredients just until combined. Do not overmix. A few small lumps are fine.
Heat a nonstick skillet or griddle over medium-low heat and lightly grease with butter or oil.
Scoop about 1/4 cup batter for each pancake onto the skillet. Cook for 2 to 3 minutes, until bubbles begin to form and the edges look set.
Flip and cook for another 1 to 2 minutes, until golden and cooked through.
Serve warm with powdered sugar, lemon slices, and fresh berries or maple syrup if desired.
