Lemon Herb Drumsticks with Herbes de Provence Olive Oil

Lemon Herb Drumsticks at The Little Shop of Olive Oils

If you’re looking for an easy chicken dinner that feels fresh, flavorful, and perfect for summer, these Lemon Herb Drumsticks are such a good one to make. They’re simple enough for a weeknight, but delicious enough to serve when friends or family stop by.

For this recipe, I used our Herbes de Provence Olive Oil, which brings a lovely savory herb flavor to the chicken, and I paired it with our Sicilian Lemon White Balsamic for a bright, citrusy finish. Together, they make these drumsticks juicy, fragrant, and full of fresh flavor.

The combination of lemon and herbs works beautifully with roasted or grilled chicken, and the drumsticks come out golden, tender, and packed with flavor. Serve them with a crisp salad, roasted potatoes, grilled vegetables, or even alongside caprese skewers for an easy summer meal.

If you love simple recipes that let quality ingredients do the work, this is one to save. It’s a great way to use flavored olive oil in everyday cooking while adding something special to your table without a lot of fuss.

  • 3 tablespoons Sicilian Lemon White Balsamic
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Franklin Raw Honey, optional for a touch of balance
  • Fresh parsley for garnish
  • Lemon wedges for serving

Directions

  1. Pat the drumsticks dry and place them in a large bowl or zip-top bag.
  2. In a small bowl, whisk together the Herbes de Provence Olive Oil, Sicilian Lemon White Balsamic, garlic, lemon juice, lemon zest, salt, pepper, Dijon mustard, and honey if using.
  3. Pour the marinade over the drumsticks and toss well to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  4. Preheat your oven to 400°F. Line a baking sheet or roasting pan with parchment paper or lightly grease it.
  5. Arrange the drumsticks in a single layer and roast for 40 to 45 minutes, turning once halfway through, until the chicken is golden and cooked through to 165°F.
  6. For extra color, broil for 2 to 3 minutes at the end, watching carefully.
  7. Garnish with fresh parsley and serve with lemon wedges.
