Lemon Herb Chicken Souvlaki

Ingredients:

  • 1½ lbs boneless, skinless chicken breast or thighs, cut into 1½" chunks
  • ¼ cup Lemon Olive Oil
  • 2 tbsp Garlic Olive Oil (optional for extra depth)
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 tbsp fresh oregano (or 1 tsp dried)
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 red bell pepper, chopped
  • 1 orange bell pepper, chopped
  • Bamboo or metal skewers

Instructions:

Marinade Instructions:

  • In a bowl, whisk together Lemon Olive Oil, Garlic Olive Oil, lemon juice, garlic, oregano, salt, and pepper.
  • Add chicken pieces and toss to coat.
  • Cover and marinate in the fridge for at least 1 hour (or up to 6 hours for more flavor).

Grilling Instructions:

  • Soak wooden skewers in water (if using) for 30 minutes.
  • Thread chicken and bell pepper chunks onto skewers.
  • Preheat grill or grill pan over medium-high heat.
  • Grill skewers 4–5 minutes per side until the chicken is cooked through and slightly charred.
  • Optional: Brush with extra Lemon Olive Oil while grilling for a juicy finish.
