
Lemon Herb Chicken Souvlaki

Ingredients:
- 1½ lbs boneless, skinless chicken breast or thighs, cut into 1½" chunks
- ¼ cup Lemon Olive Oil
- 2 tbsp Garlic Olive Oil (optional for extra depth)
- Juice of 1 lemon
- 2 cloves garlic, minced
- 1 tbsp fresh oregano (or 1 tsp dried)
- 1 tsp sea salt
- ½ tsp black pepper
- 1 red bell pepper, chopped
- 1 orange bell pepper, chopped
- Bamboo or metal skewers

Marinade Instructions:
- In a bowl, whisk together Lemon Olive Oil, Garlic Olive Oil, lemon juice, garlic, oregano, salt, and pepper.
- Add chicken pieces and toss to coat.
- Cover and marinate in the fridge for at least 1 hour (or up to 6 hours for more flavor).
Grilling Instructions:
- Soak wooden skewers in water (if using) for 30 minutes.
- Thread chicken and bell pepper chunks onto skewers.
- Preheat grill or grill pan over medium-high heat.
- Grill skewers 4–5 minutes per side until the chicken is cooked through and slightly charred.
- Optional: Brush with extra Lemon Olive Oil while grilling for a juicy finish.
