Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts or thighs, sliced
  • 2 tbsp Jalapeño Olive Oil
  • 2 tbsp Key Lime Balsamic
  • 1 tbsp fresh lime juice
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 8 small flour or corn tortillas
  • 1 cup shredded cabbage or lettuce
  • ¼ cup thinly sliced red onion
  • ¼ cup crumbled cotija or feta cheese
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
  • Optional: sliced jalapeños, avocado, or sour cream

Directions

  1. In a bowl, combine the Jalapeño Olive Oil, Key Lime Balsamic, fresh lime juice, chili powder, cumin, garlic powder, salt, and pepper.
  2. Add the sliced chicken and toss until evenly coated. Let it marinate for 10–15 minutes if you have time.
  3. Heat a skillet or grill pan over medium-high heat.
  4. Cook the chicken for 5–7 minutes per side, or until golden, slightly charred, and cooked through.
  5. Warm the tortillas in a dry skillet or directly over a low flame.
  6. Fill each tortilla with chicken, shredded cabbage, red onion, cheese, and fresh cilantro.
  7. Finish with an extra drizzle of Key Lime Balsamic or Jalapeño Olive Oil if desired.
  8. Serve with lime wedges and enjoy warm.
