  • 2 cloves garlic, minced
  • 1 tablespoon fresh lime juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon crushed red pepper flakes, optional
  • 2 cups sliced zucchini, bell peppers, broccoli, or your favorite summer vegetables
  • Fresh parsley or cilantro, for garnish

Directions
