
Spring Vinaigrette

Ingredients:
- ¼ cup Lemon Olive Oil
- 2 tbsp white balsamic vinegar (Oregano Balsamic works beautifully!)
- 1 tsp Dijon mustard
- 1 small garlic clove, finely grated
- 1 tsp honey or maple syrup (optional for a touch of sweetness)
- 1 tbsp finely chopped fresh herbs (like parsley, thyme, or oregano)
- Salt & freshly cracked black pepper, to taste
Instructions:
- In a small bowl or jar, whisk together balsamic vinegar, mustard, garlic, and honey (if using).
- Slowly drizzle in the Lemon Olive Oil, whisking continuously until the dressing is emulsified.
- Stir in fresh herbs, salt, and pepper.
- Taste and adjust seasoning if needed. Use immediately or refrigerate for up to 5 days.
