Soft and tender muffins made with Valencia Orange Olive Oil and topped with a sweet jam for a bright, citrusy twist on a classic homemade treat.
Ingredients

2 cups all-purpose flour

2 tsp baking powder

½ tsp baking soda

2 large eggs

¾ cup sugar

½ cup Valencia Orange Olive Oil

¾ cup milk or Greek yogurt

1 tsp vanilla extract

½ cup fruit jam, divided
Directions
Preheat oven to 350°F and line a muffin tin with paper liners.
In a bowl, whisk together flour, baking powder, baking soda, and salt.
In a separate bowl, whisk eggs and sugar until smooth.
Add Valencia Orange Olive Oil, milk or Greek yogurt, and vanilla. Mix until combined.
Gently fold dry ingredients into wet ingredients until just combined.
Divide batter evenly among muffin cups, filling each about ¾ full.
Spoon about 1 teaspoon of jam into the center of each muffin.
Bake for 18–22 minutes, or until muffins are golden and a toothpick comes out clean.
Let cool slightly before serving.
