Ingredients
- 2 ½ cups all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- ¾ cup sugar

- 1 tsp pure vanilla extract
- ½ tsp almond extract (optional)
- Orange and yellow food coloring (for icing)
- Royal icing or your favorite cookie icing
- Candy eyes or mini chocolate chips (optional)
Directions
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large mixing bowl, whisk sugar and olive oil until smooth. Add egg, vanilla, and almond extract; mix until combined.
- Gradually stir dry ingredients into wet ingredients until dough forms.
- Divide dough in half, shape into discs, wrap in plastic, and chill for 30–60 minutes.
- Preheat oven to 350°F. Line baking sheets with parchment paper.
- Roll dough to about ¼-inch thickness. Cut into pumpkin shapes with a cookie cutter.
- Transfer cookies to prepared sheets and bake 8–10 minutes or until edges just begin to turn golden. Cool completely.
- Decorate with icing, creating Jack-O’-Lantern faces using orange and yellow frosting. Add candy eyes or details if desired.
