Ingredients
- 1 ½ cups all-purpose flour
- 2 tsp baking powder
- ¼ tsp salt
- ¾ cup granulated sugar
- 3 large eggs

½ cup Lemon Olive Oil (The Little Shop of Olive Oils!)
- ½ cup whole milk (or buttermilk for extra tang)
- 2 tbsp lemon zest (about 2 lemons)
- 3 tbsp fresh lemon juice
- 1 tsp vanilla extract

¾ cup powdered sugar (optional)

1 ½–2 tbsp fresh lemon juice (optional)
Directions
- Preheat oven to 350°F. Grease and line a loaf pan with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a separate large bowl, whisk sugar and eggs until light and smooth.
- Add Lemon Olive Oil, milk, lemon zest, lemon juice, and vanilla. Whisk until combined.
- Gently fold the dry ingredients into the wet just until no streaks remain — don’t over-mix.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake 45–55 minutes, or until a toothpick inserted comes out clean.
- Cool 10 minutes in the pan, then lift out to cool completely on a rack.
For the glaze: whisk ingredients and drizzle over the cooled loaf. (optional)
