Ingredients

2 tablespoons Garlic Olive Oil

1 small onion, diced

2 carrots, sliced

2 celery stalks, sliced

8 cups chicken broth

2 cups cooked chicken, shredded (rotisserie works great)

2 cups egg noodles

1 bay leaf

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Directions
In a large soup pot, warm the Garlic Olive Oil over medium heat.
Add onion, carrots, and celery. Sauté for 5–7 minutes until softened and fragrant.
Pour in the chicken broth and add the bay leaf. Bring to a gentle boil.
Stir in shredded chicken and egg noodles. Reduce heat and simmer for 10–12 minutes, until noodles are tender.
Season with salt and pepper to taste.
Remove bay leaf, garnish with fresh parsley, and finish with a light drizzle of olive oil if desired. Serve warm.
