Pineapple Caprese Salad

Ingredients:
- 2 cups fresh pineapple, diced into bite-sized pieces
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh mozzarella, cubed or mini mozzarella balls
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh basil leaves
- 2 cups arugula or mixed greens
- 2 tablespoons The Little Shop of Olive Oils Pineapple Balsamic Vinegar
- 2 tablespoons The Little Shop of Olive Oils Extra Virgin Olive Oil
- Salt and freshly ground black pepper to taste
Instructions:
- In a large salad bowl, combine the diced pineapple, cherry tomatoes, mozzarella, and red onion.
- Add the fresh basil leaves and gently toss the ingredients together.
- Drizzle the Pineapple Balsamic Vinegar and extra virgin olive oil over the salad.
- Season with salt and freshly ground black pepper to taste.
- Arrange a bed of arugula or mixed greens on a serving platter.
- Spoon the pineapple, tomato, and mozzarella mixture over the greens.
- Garnish with additional basil leaves if desired.
Serve immediately, enjoying the fresh, tangy flavors of the pineapple paired with the creamy mozzarella and vibrant tomatoes.
