Ingredients:
Dressing
- 3 tablespoons Extra Virgin Olive Oil
- 1 tablespoon Pineapple Balsamic Vinegar
- ⅛ teaspoon salt
- ⅛ teaspoon coarsely ground black pepper (optional)
Spinach Salad
- 6 oz. spinach fresh
- ⅓ cup walnuts (halved or crushed)
- 8.25 oz Pineapple slices
- ¼ cup crumbled feta cheese
Instructions:
- Add dressing ingredients to a medium bowl and whisk to emulsify
- Add spinach to a large bowl
- Toss with the salad dressing
- Top with nuts, cheese and pineapple
