Leafy Green Salad with Olives

Ingredients:

  • 4 cups mixed leafy greens (such as romaine, spinach, and arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup black olives, pitted and sliced
  • 1/2 cup green olives, pitted and sliced
  • 1/4 cup extra virgin olive oil (EVOO)
  • 2 tablespoons Soyu Cucumber Vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  • Wash and dry the mixed leafy greens, then place them in a large salad bowl.
  • Add the halved cherry tomatoes, sliced cucumber, and thinly sliced red onion to the bowl.
  • Add the black and green olives.
  • In a small bowl, whisk together the extra virgin olive oil, vinegar, dried oregano, salt, and black pepper until well combined.
  • Drizzle the dressing over the salad.
  • Toss gently to coat all the ingredients evenly with the dressing.
  • Transfer the salad to a serving platter or individual bowls.
Serve immediately, and enjoy the fresh, vibrant flavors of this leafy green salad with olives.
