Arugula & Sun-Dried Tomato Salad


  • 4 cups fresh arugula
  • ½ cup sun-dried tomatoes, chopped
  • ¼ cup shaved Parmesan cheese
  • ¼ cup walnuts, toasted and chopped



  • In a large salad bowl, combine the arugula, sun-dried tomatoes, shaved Parmesan, and toasted walnuts.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until well combined.
  • Drizzle the vinaigrette over the salad and toss gently to coat.
  • Serve immediately and enjoy!
