4th of July Salad


For the Salad:

6 cups baby lettuce, or salad greens of choice

2 cups watermelon, sliced in 1/2- 1 inch cubes 

1 cup blueberries

1 cup jicama, cut in thin strips

1/2 cup feta cheese, cut in small cubes

For the dressing:

1/4 cup Persian Lime olive oil

Juice of 2 large limes

1 tablespoon honey

1 tablespoon finely chopped fresh mint leaves

Pinch of sea salt


Place salad greens in a large bowl. Top with the fruit, jicama, and feta cheese. Whisk together Persian Lime olive oil, lime juice, honey, mint, and salt. Drizzle dressing over salad and serve.

Serving suggestion:  Get creative and use a small star cookie cutter to create watermelon and jicama stars!
