A simple roast chicken gets a festive upgrade with balsamic vinegar, fresh herbs, and golden potatoes. One pan, minimal prep, and maximum holiday comfort.
Ingredients
- 1 whole chicken (4–5 lbs)
- 1½ lbs small potatoes, halved
- 3 tablespoons extra virgin olive oil

2–3 tablespoons Traditional Dark, Cranberry Pear, or Pomegranate Balsamic Vinegar
- 3 cloves garlic, smashed
- Fresh rosemary or thyme sprigs
- Salt and pepper, to taste

Optional garnish: red currants & roasted garlic heads
Directions
- Preheat oven to 425°F.
- Pat chicken dry and season generously with salt and pepper.
- Toss potatoes with olive oil, garlic, salt, and pepper. Arrange in a roasting pan.
- Place chicken on top of potatoes.
- Drizzle balsamic vinegar over the chicken and potatoes.
- Scatter fresh herbs around the pan.
- Roast uncovered for 70–80 minutes, until the chicken is golden and cooked through (165°F internal temp).
- Let rest 10 minutes before carving. Drizzle pan juices over the top before serving.
