Sweet, smoky, and full of tropical flavor, these grilled chicken skewers are marinated in Chipotle Olive Oil, Pineapple Balsamic, lime, garlic, and honey before being grilled to juicy perfection.

Chipotle Pineapple Glazed Chicken Skewers

Ingredients

  • 1.5 lbs chicken breast, cut into chunks
  • 2 tbsp Chipotle Olive Oil
  • 2 tbsp Pineapple Balsamic
  • 2 cloves garlic, minced
  • Zest and juice of 1 lime
  • 1 tbsp Franklin Raw Honey
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • Pineapple chunks (fresh or canned)
  • Optional: red onion or bell pepper chunks
  • Bamboo skewers, soaked in water

Directions

  1. In a bowl, whisk together Chipotle Olive Oil, Pineapple Balsamic, garlic, lime juice and zest, honey, paprika, salt, and pepper.
  2. Add chicken to the marinade, toss to coat, and refrigerate for at least 30 minutes (or up to 2 hours).
  3. Thread chicken, pineapple, and optional veggies alternately onto soaked skewers.

  4. Grill over medium-high heat for 10–12 minutes, turning occasionally, until chicken is fully cooked and slightly charred.
  5. Garnish with lime and cilantro. Serve warm.
