Ingredients

    For the Filling

    • 1½ lbs ground lamb or ground beef
    • 2 tbsp Garlic Olive Oil
    • 1 medium yellow onion, diced
    • 2 medium carrots, diced
    • 2 cloves garlic, minced
    • 2 tbsp tomato paste
    • 2 tbsp Traditional Dark Balsamic
    • 1 tbsp Worcestershire sauce
    • 1 tsp fresh thyme leaves or ½ tsp dried thyme
    • 1 cup beef broth
    • 1 cup frozen peas
    • ½ cup frozen corn, optional
    • 1 tbsp all-purpose flour
    • Salt and freshly ground black pepper, to taste

    For the Mashed Potato Topping

    • 2 lbs russet or Yukon Gold potatoes, peeled and cut into chunks
    • 3 tbsp Butter Olive Oil
    • ½ cup warm milk or cream
    • ½ tsp salt, or to taste
    • Freshly ground black pepper, to taste
    • ¼ cup grated Parmesan or cheddar cheese, optional

    Directions

    1. Preheat oven to 400°F.

    2. Place the potatoes in a large pot of salted water. Bring to a boil and cook for approximately 15–20 minutes, or until fork-tender.

    3. While the potatoes cook, heat the Garlic Olive Oil in a large skillet over medium heat.

    4. Add the onion and carrots and cook for 5–6 minutes, until beginning to soften.

    5. Add the minced garlic and cook for another 30 seconds.

    6. Add the ground lamb or beef and cook, breaking it apart with a spoon, until browned and cooked through. Drain excess fat if needed.

    7. Stir in the tomato paste and flour and cook for about 1 minute.

    8. Add the Traditional Dark Balsamic, Worcestershire sauce, thyme, and beef broth. Stir well and simmer for 5–7 minutes, until the sauce begins to thicken.

    9. Stir in the peas and corn, if using. Season with salt and pepper to taste.

    10. Transfer the meat mixture to a 9 x 13-inch baking dish or similar casserole dish.

    11. Drain the potatoes well and return them to the pot.

    12. Add the Butter Olive Oil, warm milk or cream, salt, and pepper. Mash until smooth and creamy.

    13. Spoon the mashed potatoes over the filling and spread evenly. Use a fork to create ridges across the top.

    14. Sprinkle with Parmesan or cheddar, if desired.

    15. Bake for 20–25 minutes, or until the filling is bubbling and the potatoes are lightly golden.

    16. For extra color, broil for 2–3 minutes at the end, watching carefully.

    17. Let rest for 5–10 minutes before serving.
