Ingredients
- 1 medium zucchini, grated
- 2 large eggs
- 1 cup all-purpose flour
- ½ cup shredded cheese (cheddar, mozzarella, or your choice)
- ¼ cup milk

- 1 tsp baking powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp chopped parsley or basil
- Optional topping: sour cream, Greek yogurt, or crème fraîche
Directions
- Preheat your waffle iron.
- Grate the zucchini, then squeeze out excess moisture with a clean towel or paper towels.
