Lemon Herb Grilled Chicken


  • 4 boneless, skinless chicken breasts
  • 3 tablespoons extra virgin olive oil (EVOO)
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • Lemon slices (grilled), evoo for drizzling and thyme sprigs for garnish


  • In a small bowl, mix together EVOO, lemon juice, minced garlic, parsley, thyme, salt, and pepper.
  • Place the chicken breasts in a large resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 30 minutes, or up to 2 hours.
  • Preheat the grill to medium-high heat.
  • Remove the chicken from the marinade and discard the remaining marinade.
  • Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F
  • Grill the lemon slices till slightly browned
  • Serve the grilled chicken with garnishes
