Lemon Herb Grilled Chicken

Ingredients:
- 4 boneless, skinless chicken breasts
- 3 tablespoons extra virgin olive oil (EVOO)
- 2 tablespoons lemon juice
- 2 garlic cloves, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- Lemon slices (grilled), evoo for drizzling and thyme sprigs for garnish
Instructions:
- In a small bowl, mix together EVOO, lemon juice, minced garlic, parsley, thyme, salt, and pepper.
- Place the chicken breasts in a large resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 30 minutes, or up to 2 hours.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and discard the remaining marinade.
- Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F
- Grill the lemon slices till slightly browned
- Serve the grilled chicken with garnishes
