Ingredients
- 1 (16 oz) package potato gnocchi

2 tablespoons Garlic Olive Oil
- 3 cups fresh spinach, kale, or chard (roughly chopped)
- 2 cloves garlic, minced (optional for extra garlic kick)
- 1/3 cup cherry tomatoes, halved (or 2 tablespoons tomato paste)
- Salt and pepper to taste
- Fresh herbs or microgreens for garnish
- Grated Parmesan (optional)
Directions
- Bring a pot of salted water to a boil. Cook gnocchi according to package instructions. Drain and set aside.
- In a large skillet over medium heat, warm the Garlic Olive Oil.
- Add garlic (if using) and sauté for 30 seconds, then stir in cherry tomatoes or tomato paste. Cook until softened, about 2–3 minutes.
- Add the chopped greens and sauté until wilted.
- Toss in the cooked gnocchi and stir until well coated and warmed through. Season with salt and pepper to taste.
- Plate and garnish with microgreens or fresh herbs and Parmesan if desired.
