For the Shrimp

1 lb shrimp, peeled and deveined

2 tablespoons Persian Lime Olive Oil (or EVOO)

¼ teaspoon black pepper
For the Tacos

8 small tortillas (corn or flour)

2 cups shredded cabbage or slaw mix

½ cup crumbled queso fresco or feta

Fresh cilantro, chopped

Lime wedges
For the Pineapple Salsa

1 cup fresh pineapple, diced

Directions
In a small bowl, combine the pineapple, red onion, cilantro, lime juice, and salt.
