Fig & Arugula Pizza

Ingredients:

  • 1 lb. pizza dough (store-bought or homemade)
  • 1 tablespoon Premium Extra Virgin Olive Oil
  • Cornmeal (for dusting)
  • 1 cup shredded mozzarella cheese
  • 4-5 fresh or dried figs, sliced thin
  • 4 slices prosciutto, torn into pieces
  • 1 cup fresh arugula
  • ¼ cup shaved Parmesan cheese

For the Fig Balsamic Drizzle:

Instructions:

  • Preheat your oven to 475ºF (245ºC). If using a pizza stone, place it in the oven while it heats up.
  • On a lightly floured surface, roll out the pizza dough to your desired thickness.
  • Transfer the dough to a piece of parchment paper dusted with cornmeal to prevent sticking.
  • Brush the pizza dough with 1 tablespoon of extra virgin olive oil.
  • Evenly spread the shredded mozzarella cheese over the dough.
  • Arrange the fig slices and prosciutto pieces on top of the cheese.
  • Transfer the parchment paper with the pizza onto the preheated pizza stone or a baking sheet.
  • Bake for 10-12 minutes, or until the crust is golden and the cheese is bubbly.
  • Remove the pizza from the oven and immediately top with fresh arugula and shaved Parmesan cheese.
  • In a small bowl, whisk together the fig balsamic vinegar and 1 tablespoon of extra virgin olive oil.
  • Drizzle the fig balsamic mixture over the pizza.
  • Slice the pizza and serve warm.
