The soft, olive-oil infused focaccia soaks up a rich egg custard, while layers of veggies, cheese, and herbs bring everything together. Leftover Focaccia Strata

Ingredients

  • 4 cups leftover focaccia, cut into cubes
  • 1 cup shredded mozzarella (or fontina/cheddar)
  • ½ cup grated Parmesan
  • 1 small onion, diced
  • 1 cup cooked vegetables (spinach, mushrooms, peppers, or tomatoes)
  • 1 cup cooked meat (optional – sausage, ham, or chicken)
  • 6 large eggs
  • 2 cups milk (or half milk, half cream for richness)
  • 2 tbsp Garlic Olive Oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried oregano or thyme

Directions

  1. Preheat oven to 375°F. Lightly oil a 9x13 baking dish with Garlic Olive Oil.
  2. Spread focaccia cubes evenly in the dish. Sprinkle with cheese, veggies, and meat.
  3. In a bowl, whisk eggs, milk, Garlic Olive Oil, salt, pepper, and herbs.
  4. Pour mixture over focaccia, pressing down gently so bread soaks it up. Rest for 10 minutes (or refrigerate overnight).
  5. Bake uncovered 35–40 minutes, until puffed and golden.
  6. Serve warm and enjoy!
