Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 2 tablespoons The Little Shop of Olive Oils Garlic Olive Oil, divided
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 8 ounces cremini or baby bella mushrooms, sliced
  • 3 cloves fresh garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried thyme
  • ¼ teaspoon crushed red pepper flakes, optional
  • 2 tablespoons chopped fresh parsley, plus more for garnish
  • Additional Parmesan cheese for serving, optional

Directions

  4. Cook the mushrooms. Reduce the heat to medium. Add the remaining tablespoon of Garlic Olive Oil and the sliced mushrooms to the same skillet. Cook for 4–5 minutes, stirring occasionally, until the mushrooms are tender and lightly browned.
  5. Add the minced garlic and cook for about 30 seconds, just until fragrant.
