A creamy Chipotle Spinach & Cheese Quiche made with Chipotle Olive Oil, fresh spinach, eggs, and melty cheese for a smoky, flavorful twist on a classic brunch dish.
Ingredients
- 1 store-bought or homemade 9-inch pie crust

1 Tbsp Chipotle Olive Oil
- 1 small onion, finely chopped
- 2 cups fresh spinach (or 1 cup frozen, thawed & drained)
- 4 large eggs
- 1 cup whole milk (or half & half for extra richness)
- 1 cup shredded cheese (cheddar, mozzarella, Swiss, or a mix)
- ½ tsp salt
- ¼ tsp pepper
- Pinch of nutmeg (optional)
Directions
- Preheat oven to 375°F. Place the pie crust in a 9-inch pie dish and crimp the edges. Set aside.
- Sauté the veggies: In a skillet over medium heat, warm the Chipotle Olive Oil. Add onion and sauté until soft, about 5 minutes. Add spinach and cook until wilted (or warmed through if using frozen). Let cool slightly.
- Whisk the custard: In a bowl, whisk together the eggs, milk, salt, pepper, and nutmeg.
- Layer the filling: Spread the spinach mixture evenly in the pie crust. Sprinkle cheese over the top, then pour the egg mixture over everything.
- Bake for 40–45 minutes, or until the center is set and the top is golden brown. Let cool 10 minutes before slicing.
