Ingredients

  • 1 package (18–20 oz) butternut squash ravioli
  • ⅓ cup walnuts, roughly chopped
  • 2 tbsp Roasted Walnut Oil
  • 2 tbsp unsalted butter
  • 8–10 fresh sage leaves, roughly chopped or torn
  • 1 small shallot, finely minced
  • 2 tbsp Vermont Maple Dark Balsamic
  • ¼ tsp ground nutmeg
  • ¼ tsp freshly ground black pepper
  • Salt, to taste
  • ¼ cup freshly grated Parmesan cheese, plus more for serving
  • ¼ cup reserved pasta water, as needed

Directions

  1. Bring a large pot of salted water to a gentle boil and cook the butternut squash ravioli according to package directions. Reserve about ¼ cup pasta water before draining.

  2. While the ravioli cooks, place the chopped walnuts in a large dry skillet over medium-low heat. Toast for 3–4 minutes, stirring frequently, until fragrant. Remove from the skillet and set aside.

  3. Add the Roasted Walnut Oil and butter to the same skillet over medium heat.

  4. Add the minced shallot and cook for approximately 2 minutes, until softened.

  5. Add the fresh sage and cook for another 1–2 minutes, until fragrant and slightly crisp.

  6. Reduce the heat to medium-low and stir in the Vermont Maple Dark Balsamic, nutmeg, black pepper, and a small pinch of salt.

  7. Add 2–3 tablespoons of reserved pasta water and stir until the sauce becomes glossy and slightly emulsified.

  8. Add the drained ravioli to the skillet and gently toss until evenly coated in the maple-walnut sage sauce.

  9. Add about half of the toasted walnuts and Parmesan and gently toss again. Add a splash more pasta water if needed to loosen the sauce.

  10. Transfer to serving plates and finish with the remaining toasted walnuts, additional Parmesan, and a few fresh or crisped sage leaves.

  11. Serve immediately while warm.
