1 3/4 lbs. skinless boneless chicken breasts

2 green onions, chopped

1/2 cup diced celery

3/4 cup diced apple, finely chopped

1/3 cup pecans, toasted and finely chopped

3 tablespoons chopped fresh parsley

5 tablespoons Basil Premium Olive Oil

3 tablespoons Peach White Balsamic Vinegar

2–3 tablespoons plain Greek yogurt

Sea salt, to taste

Fresh cracked pepper, to taste
Directions
Place the chicken breasts in a saucepan and cover with water.
Add 1 tablespoon of salt and bring to a boil.
Turn off heat, cover, and let sit for 12 minutes.
Check for doneness; if needed, let sit an additional 5 minutes until fully cooked (165°F internal temperature).
Drain and cool completely.
Cut chicken into small, even pieces.
In a large bowl, combine chicken, green onions, celery, apple, parsley, and pecans.
