It started like a lot of Monday nights do… opening the fridge, staring for a minute, and mentally piecing together something easy. Leftover chicken, a head of broccoli, a box of thin spaghetti, and of course—garlic olive oil.
When Simple Feels Just Right
There’s something about pasta that always feels comforting, but this one felt a little lighter, a little easier. Instead of a heavy cream-based Alfredo, I pulled together a quick homemade sauce using almond milk, a little flour to thicken it, Parmesan cheese, and garlic olive oil to bring it all together.
No measuring cups lined up. No overthinking. Just cooking by feel.
The broccoli went right into the pasta water at the end (one less pan—always a win), the chicken warmed through in the skillet, and the sauce came together in minutes. Before long, everything was tossed together with those thin strands of spaghetti soaking up all that flavor.

A lighter take on classic Alfredo made with almond milk, garlic olive oil, and Parmesan cheese. Tossed with tender chicken, broccoli, and thin spaghetti, this is a simple, comforting dinner without the heaviness of traditional cream sauces.
Ingredients

8 oz thin spaghetti

2 cups cooked chicken breast, cubed

2 cups broccoli florets

3 tbsp Garlic Olive Oil

2 cloves garlic, minced (optional)

2 cups unsweetened almond milk

2 tbsp flour

½–¾ cup grated or shaved Parmesan cheese

½ tsp salt (adjust to taste)

¼ tsp black pepper

Optional: pinch of Italian seasoning or red pepper flakes
Directions
Bring a large pot of salted water to a boil. Cook thin spaghetti according to package directions.
In the last 2–3 minutes of cooking, add broccoli to the pasta water. Drain together and set aside.
In a large skillet, heat Garlic Olive Oil over medium heat. Add garlic (if using) and sauté for about 30 seconds.
Sprinkle in the flour and whisk continuously for about 1 minute to create a light roux.
Slowly pour in the almond milk, whisking constantly to avoid lumps. Let it simmer until it begins to thicken (3–5 minutes).
Stir in Parmesan cheese and continue mixing until smooth and creamy.
Add cooked chicken, then toss in the pasta and broccoli. Stir until everything is well coated.
Season with salt, pepper, and optional spices. If needed, loosen the sauce with a splash of pasta water.
Top with extra shaved Parmesan and serve warm.

Almond milk keeps this sauce lighter, but still creamy thanks to the Parmesan.
Garlic Olive Oil adds depth without needing butter or heavy cream.
If the sauce gets too thick, just add a little pasta water to bring it back.
